Majboos al Laham
Majboos is one of the famous Arabian rice dish. (Also know as Kabsa, Makboos, majboos laham, Mutton pilaf or Pulao)
- Mutton (Big pieces) - 1 Kg
- Cinnamon stick (Patta /karugapaata) - 1 small piece
- Cloves (Grambu) - 4 pcs
- Cardamom - 4 Nos
- Fennel seeds - 1 tea spoon
- Dried Lemon - 1
- pepper seed - few
- Turmeric powder - 1 tea sponn
- Salt - for taste
- For Making Rice
- Basmati rice - 2 big cups
- Ghee / Oil - 2 table spoon
- Onion - 1
- Tomato - 1
- Ginger, Garlic and Green chili Paste - 1 Table spoon
- Garama masala - 1/2 tea spoon
- Majboos Masala - 2 tea spoon
- Coriander leaves - few
- cashewnuts - 10 pcs
- Raisin - few
Wash and soak rice for 20 minutes.
Add Mutton peices, cloves, a pinch of turmeric powder, pepper, cumin seeds, cinnemon sticks, grambo, salt and water into a thick bottomed cooking vessel. Make sure the mutton is fully covered in water while cooking. Cook in low flame until it gets tender and juicy.
Keep the mutton pieces aside and keep the water and spices for making rice
Heat ghee/Oil in a vessel and add onions and saute well till they turn brown. Add Tomoto garlic- ginger-green chillies paste.
Saute it on low flame for 3 minutes, Add chopped coriander leaves and saute again. Add garam masala and majboos masala saute until the oil separated. Add four cups of water along with the spices from the cooked mutton.
Boil the water and add the rice and cook on a medium heat. Sprinkle a little lemon juice on it.
Add the motton pieces on top of it and Garnish with coriander leaves, fried raisins and cashew nuts
